M de Malle
75% Sauvignon Blanc, 25% Semillon, spends 9 months on fine lees, matured in stave wood (split not sawn) for 6-9 months. One third of the barrels are new and two thirds are one year old. The wine is bottled in May and rests in the bottle for 12 months. The Sauvignon Blanc provides the fruit, freshness and aroma, while the Semillon imparts roundness and finesse.
